Method

  1. Place a bamboo steamer over a wok or frying pan (so that it sits on top safely). Fill the wok with a few cups of water, place on high heat. Alternatively if you have an electric steamer, use this.

  2. Place fish fillets on a plate that fits into the steamer then sprinkle over garlic, ginger, wine, soy sauce, sesame oil, half the amount of the spring onion and chilli over the fish fillets. Place the plate in the steamer, cover with lid, and cook for about 7 minutes.

  3. Place wok or frying pan over high heat, add a little peanut oil, when hot add extra garlic and ginger, cook for a minute, deglaze wok or pan by adding a little rice wine, add Asian greens and oyster sauce and toss frequently until cooked through.

  4. Serve wok tossed greens with steamed snapper and rice
