Method

  1. Cook noodles following packet directions or until tender (approx 5 min). Drain well. Return to pan and cover to keep warm.

  2. Meanwhile, combine the pork and 1 tablespoon of the black bean sauce in a medium bowl. Set aside for 5 minutes to marinate.

  3. Meanwhile, heat oil in a large wok or frying pan over high heat. Add the pork mixture and stir-fry for 2-3 minutes or until browned. Add remaining black bean sauce, shallots, sugar snap peas and mushrooms and stir-fry for 2 minutes or until heated through.

  4. Divide the noodles evenly among serving plates and top with the pork stir-fry.
