Method

  1. Preheat oven to 180°C/160°C fan-forced. Cut each rack of ribs in half. Heat oil in a large frying pan over medium-high heat. Cook ribs, in batches, for 2 minutes each side or until browned. Transfer to a large roasting pan.

  2. Add capsicum to pan. Cook, stirring, for 3 minutes or until just softened. Add paprika, soup and stock. Bring to the boil. Pour tomato mixture over ribs. Turn ribs to coat. Cover with foil.

  3. Bake for 1 hour. Remove foil. Bake for 30 minutes. Using kitchen scissors or a knife, cut racks into individual ribs. Serve ribs with tomato mixture and baby spinach.
