Create a delicious family feast with these sausage and slaw baguettes topped with cheese and tomato relish.

Method

  1. Heat olive oil in a large frying pan over medium heat and add sausages. Cook for about 10 mins, turning occasionally, until well browned and cooked through.

  2. Meanwhile, combine mayonnaise and lemon juice. Toss through coleslaw mix and most of the spring onion, keeping a little aside.

  3. Use a small serrated knife to cut baguettes along the centre at the top, not cutting all the way through. Cut each baguette into 3 pieces. Fill with coleslaw mixture then a sausage. Top with tomato relish and cheese and sprinkle remaining spring onion on top.
