Method

  1. Preheat oven to 120°C. Warm a baking tray in oven. Wash, peel and grate potatoes.

  2. With your hands, squeeze as much liquid as possible from potato. Discard liquid. Transfer potato to a large bowl. Season and stir until well-combined.

  3. Heat one-third of butter and 1 tablespoon of oil in a non-stick frying pan over medium heat until foaming. Spoon 1/3 cupfuls of mixture into frying pan. Flatten with a spoon.

  4. Cook for 5 minutes on each side, or until golden. Transfer to heated baking tray and keep warm in the oven. Repeat with remaining mixture, adding butter and oil as required. Serve with grilled tomatoes, if desired.
