Method

  1. Place some plain flour in a large oven bag and shake to coat the inside, tipping out any excess. Rinse the silverside under cold running water. Place in the floured bag and then in a deep, 3-litre (12-cup) capacity microwave-safe dish.

  2. Combine the water, vinegar and sugar in a jug. Pour the vinegar mixture into the bag. Add the peppercorns, cloves, parsley and bay leaves.

  3. Secure the bag with unwaxed white kitchen string and lay the silverside flat in the dish (the silverside should be completely covered with liquid). Use a skewer to carefully pierce 3 small holes in the top of the bag. Place in the microwave and cook on Medium/ 500watts/50% for 51 minutes.

  4. Remove from the microwave and set aside in the hot liquid for 1 hour to complete the cooking process and make the silverside easier to slice. Drain the liquid. Slice and serve warm or cold.
