Curried apple mayonnaise is the perfect complement to this juicy chicken mince burger with crispy bacon.
Curried apple mayonnaise:
For mayonnaise, combine all ingredients in a small bowl. If mixture is too thick, thin with a little water.
Place chicken mince, breadcrumbs, egg, onions and corn in a bowl. Season to taste with salt and pepper, then mix well to combine. Divide into 4 portions and shape each into a large, 3cm-high patty. Transfer to a plate.
Heat a large non-stick frying pan over medium heat and cook bacon for 1 minute each side or until light golden. Drain on a paper towel-lined plate. Add oil to pan and heat over medium-high heat. Add chicken patties and cook for 5-7 minutes each side or until cooked through and well browned. To serve, divide lettuce among bun bases, then top with patties, bacon, a spoonful of curried apple mayonnaise and bun tops.
